The Byeongsan-dong area clusters several restaurants specializing in potato ongsimi. The dumplings are made by grating raw potato, straining out only the starch, and kneading it into dough. Drop a piece into hot broth and it turns translucent, acquiring a chewy bounce somewhere between rice cake and hand-torn noodle — a texture you only understand once you have tried it. A bowl runs 8,000 to 10,000 won. Portions are generous and the broth is clean and mild. Several competing shops line the same street, so if time allows, tasting two side by side is a worthwhile experiment. Lines form at noon; arriving a little early saves the wait.
